This is a culinary practice involving the creation of sweet products such as cakes, candies, cookies, pastries, chocolate, and other desserts. Confectionery has ancient roots tracing back to civilizations like Ancient Egypt, Mesopotamia, India, and China, where sweets were made using honey, nuts, and fruits. With the development of trade and the spread of sugar from India to Persia and then to Europe, confectionery art began to flourish. In medieval Europe, sweets were a luxury item accessible only to the nobility and were often used by apothecaries to mask the taste of medicines. During the Renaissance, particularly in Italy and France, confectionery gained the status of high art, with the emergence of refined desserts and complex recipes. The Industrial Revolution and the reduced cost of sugar in the 19th century made confectionery products accessible to the general public, leading to the establishment of factories and mass production of sweets. In Russia, the development of confectionery began with small workshops, and by the early 20th century, there were over 140 confectionery factories in the country, such as the Abrikosov and Siu factories. Modern confectionery art combines traditional recipes with innovative technologies, offering a variety of tastes and forms, from classic cakes to vegan and gluten-free desserts. Confectionery remains an important part of culture and the economy, symbolizing celebration, comfort, and gastronomic delight.
