This is a technological practice of preserving food by hermetically sealing it and applying heat treatment to prevent spoilage and extend shelf life. In the early 19th century, during the Napoleonic Wars, French chef and confectioner Nicolas Appert developed a method of canning that involved placing food in glass jars, sealing them with corks and wax, and then boiling them to eliminate spoilage-causing microorganisms. In 1810, he published a book titled "The Art of Preserving All Kinds of Animal and Vegetable Substances," detailing his technique. Later that year, British merchant Peter Durand patented the use of tin cans for food preservation, making the process more convenient and suitable for mass production. Canning played a crucial role in supplying food to armies and populations, especially during times of war and crisis, and laid the foundation for the modern food industry. Today, canning is employed both industrially and domestically to preserve a wide variety of foods, from fruits and vegetables to meats and fish.
