Is a sensory and analytical practice of evaluating food based on conscious perception of taste, aroma, texture, temperature, and visual presentation to assess its quality, characteristics, origin, or culinary value. Food tasting as a formalized activity emerged from ancient rituals and communal meals in Greece, Rome, China, and India, but its modern development is closely linked to French gastronomy of the 17th to 19th centuries, with the rise of culinary schools and professional communities of chefs, sommeliers, and critics. Since the 20th century, the practice has extended beyond elite culture and entered the mainstream through food festivals, restaurant reviews, TV and internet shows, and culinary blogs. Food tasting can be both professional — using standardized methods to evaluate the organoleptic properties of ingredients (including in agro and food industries) — and amateur, as a way to deepen one’s appreciation of world cuisines and refine taste perception. The practice involves skills in assessing flavor balance (sweetness, saltiness, acidity, bitterness, umami), analyzing texture and aroma, describing sensory impressions verbally, and understanding the cultural and gastronomic context of the dish. It is applied in restaurants, culinary schools, tasting clubs, competitions, and exhibitions. Notable examples include the Michelin Guide, Le Cordon Bleu culinary schools, TV shows like MasterChef, and the growing trend of food tourism and culinary excursions where tasting becomes a form of cultural and sensual exploration.
